The problem: retail foot traffic is a rollercoaster
Retail sales swung as much as 40% week to week with weather and season. Wholesale, by contrast, is a standing order: the same cafés, the same loaves, every Tuesday and Friday. The Alvarezes decided to treat wholesale not as surplus capacity but as the core business.

Three changes that did the work
- A one-page wholesale menu with fixed weekly pricing — no negotiation, no custom quotes.
- A Thursday cut-off for order changes, which cut waste from 12% to under 4%.
- Quarterly tastings for prospective accounts, batched into a single morning.
None of this is glamorous. All of it is repeatable. The bakery added seven accounts in fourteen months, and the standing orders now cover rent and payroll before the retail door even opens.
